Rooster ale (Sriracha and Cilantro Ale):

Made with the beloved Sriracha sauce.  A pale ale with a distinct Sriracha and cilantro nose.   Very light-bodied with subtle chili heat and vegetal flavors.  Surprisingly clean and refreshing.  5.6%  IBU:17

Belgian Brown:

A brown ale brewed with Belgian Ardennes yeast and Bullion hops.  Classic Belgian spice nose with herbal and floral flavors.  6.3%  IBU:31

Knight Rye’der (Black Rye IPA):

Our collaboration with Road Dog’s Seattle Brewery Tours.  A black IPA made with Chinook, Cascade and Simcoe hops.  Piney, herbal, chocolate and floral notes on the nose.  Medium-bodied with herbal and spicy flavors from the hops and malt.  Some roasted malt flavors, along with a subtle alcohol presence.  Well-balanced.  7.3%  IBU:55.5

New Beer Poll

New Beers on Tap:

Coconut Stout:

Brewed with toasted coconut shavings.  Lots of coconut aroma along with notes of dark malts.  Malty, sweet, chocolate and coffee flavors.  Clean bitterness with a coconut finish.  ABV: 6.5%  IBU: 42

Sahti (Juniper Rye):

Brewed as close to the traditional Finnish style as we were willing to do.  A rye beer brewed with Bavarian Hef yeast, mashed with juniper berries and only boiled for ten minutes with zero hop additions.  Strong banana nose with some hints of juniper.  Sweet, smooth and fruity. Some clove notes along with a pleasant juniper finish.  ABV: 7.6%  IBU:?

Bitter Ninnies (Belgian IPA):

Bitter ninnies seeking the seemingly ubiquitous NW IPA will be very disappointed by this beer.  A Belgian IPA brewed with Ardennes yeast and experimental hops #1210 and #6300.  Sweet nose with an array of citrus and tropical fruits.  Mild bitterness, medium-bodied with earthy, grassy flavors and notable clove presence.    ABV: 7.1%  IBU:54

 

New Beer: Durian Dubbel

Classic Belgian double with the fruit of 4 durians thrown into half a barrel.  Citrus fruits, coconut, dates and plums on the nose, along with undeniable durian funk.  Medium-bodied with subtle bubblegum, clove and mango-esque flavors.  Bizarre, yet damn tasty.  ABV: 8.5%  IBU:21

January Beer Poll Winner

ImageBad news for cat-shit lovers: The competition was tough this month, but the durian fruit won our January Beer Poll by a hair! This exotic fruit is known for its foul smell, but surprisingly pleasant and complex flavor. Our fearless brewer will be cracking these three open this month and you’ll be able to try the beer in early March!  The new poll will be up shortly.

#2 Release from our Healing of the Nation Series

Just tapped from our medicinal series is a wheat ale brewed with Schisandra berry and Astragalus root.  Astragalus and Schisandra are herbs most commonly found in traditional Chinese medicine.   Schisandra is said to “calm the heart and quiet the spirit” and Astragalus is used to boost the immune system.  In this ale they provide a unique peppery nose, along with subtle earthy flavors and a tart, sweetness similar to red currants.  As with the last Healing of the Nation beer, we will be limiting it to one glass per person. Cheers.

ABV: 7.4% IBU: 17.1
